What! I have to give up sugar and wheat? But I love bread!
It was extremely hard for me to give up bread and sweets, but when my cancer returned, I realized I needed to change my diet and beat it with nutrition. Chemotherapy killed my tumors (and me!) but it didn’t kill the cancer stem cells growing in my body. If I kept doing the same things, I wouldn’t win the battle!
Cancer cells love sugar! That is why refined carbohydrates like white sugar, white flour, high fructose corn syrup and soft drinks are extremely dangerous for anyone with or without cancer. It’s all about what causes inflammation in your body. Do your research, but do it in non-allopathic web sites. Go to the alternative medicine sites to learn the truth about sugar, wheat and grains. There are some really great books out now, and I will get them onto a blog shortly.
When I discuss sugar and wheat with people, they don’t realize that these ingredients are in most of your packaged and processed foods you love and buy every week. Bread is a perfect example of this. Did you know there are over 50 names for sugar? Learn them. Then, start reading the ingredients of what you are purchasing in the grocery store. You’ll be amazed at the real sugar content.
I have learned to make this cauliflower bread/pizza crust and it’s delicious! All it contains is shredded cauliflower, shredded Parmesan cheese and 1 egg. I was making this as one pizza crust, but decided to make sandwich rounds and put it into my Whoopie pie pan. Use baking parchment for ease of removal and bake at 400 degrees for about 15-20 minutes. Below is a picture of what it should look like coming out of the oven. Once cooled I used it to make an Avocado and vegetable sandwich pictured above. Very yummy and good for you. Three ingredients – that’s it! No chemicals, no sugar, no preservatives! Yes, I know, it has cheese in it, but I do indulge in some cheese every now and again. Try this, you’ll really love it.
2 cups of grated cauliflower – you can use a hand grater or faster in a food processor. What you are doing is basically making a fine cauliflower rice. The bits should be small but not mushy. I have found that if you don’t pack the bowl of the processor too full, it comes out better. It’s all trial and error and you will get the hang of it easily.
Once you have the riced cauliflower, put it into a frying pan on medium to high heat and stir around for about 5 minutes or more until it looks like it is on the dryer side. What you are doing is removing the wetness and moisture so it appears to be like a fluffy rice. Don’t overcook on this step. Some cauliflowers have more moisture than others, so the time may vary slightly.
1 cup of grated Parmesan Cheese. I like to us the heavier grated vs. the fine powder grated, but I have used both, and they both come out nicely. For this bread version I used finely grated Parmigiano reggiano cheese.
1 Large egg
Step 1: Set your oven to 400 degrees, and prepare the items for mixing.
Step 2: I use baking Parchment paper on the pizza pan and in the Whoopie pan. You can see bits of it sticking out in the picture below. It’s a little more effort, but you will be happy you did this!
Step 3: In a large bowl, mix the egg. Then add in the cheese. Once all mixed, add in the cauliflower and mix up. At this point you can either make a small pizza pie crust or divide up as I did for the breads.
For your first time doing this, I would suggest making the pizza crust. It’s easier. Just spread out the dough onto the parchment paper with your hands onto your pizza pan and make it into a circle. I think it’s about an 9″ circle. Try to keep the crust at an even height all the way around. About a 1/4″ to 3/8″ – but keep it even so it cooks evenly. If the sides are less than the middle, they will burn or overcook and the middle won’t be done. It’s not rocket science, so I know you can do it!
Step 4: Place in oven and after about 10 minutes, take a look and see what’s it doing. Mine typically take anywhere from 20 – 30 minutes to bake. You don’t want it tough, so you have to look at it and judge. It should be soft and pliable but hold together well when you pick it up. The bottom should not be burned ( Make sure it’s cooled down when you handle it!)
Once cooled, you can make the pizza. I put the crust upside down, so that the darker bottom is on top and so when rebaking as pizza it will cook evenly. For the bread rounds, I wrapped them in wax paper and put into a plastic bag and they were good for a whole week. Makes for a fast sandwich or quick baby pizzas. That’s it. Easy and delicious!
